Ingredients
- 6 hard-boiled eggs

2 Tbsp | Nonfat plain yogurt

1 Tbsp | Mayonnaise

1 Tbsp | Windy City Mustard

salt & pepper to taste

1 Teaspoon | Concentrated Red Food Dye

1 Teaspoon | Concentrated Blue Food Dye
Directions
Step 1: Add the eggs to a pot and pour water to about an inch above the eggs. Place on a stove until the water begins to boil.
Step 2: As soon as the water starts boiling, cover the pot and remove from heat.
Step 3: Leave the eggs in the pot for 10 minutes, then drain and immediately soak in an ice bath.
Step 4: Peel the boiled eggs and slice them in half, removing the yolks and setting them aside in a small bowl.
Step 5: Mix 1 cup of hot water with 1 teaspoon of food coloring and 1 Tbsp of white distilled vinegar. Place egg white halves into the bowl for 1-2 minutes.
Step 6: Use a fork or whisk to combine the egg yolks with yogurt, mayonnaise, Windy City Mustard, salt, and pepper.
Step 7: Pipe the mixture into each egg half and serve!
