Elote Inspired Corn Waffle

Ingredients
- 1 cup Corn
- Tbsp Corn starch
- Tbsp Feta or cotija
- 1 Tbsp. Cilantro, chopped

Freshly Grated Parmesan Garlic Hot Sauce
Directions
- In a small bowl, mix corn and corn starch until combined.
Add the mixture to a greased mini waffle maker and cook until it starts to brown.
Sprinkle some cheese on top to make it crispier and help it hold together, then close the waffle maker for another few minutes.
When the cheese forms a crust and no longer sticks, they're ready for top-pings.
Add some Freshly Grated Parmesan Garlic Hot Sauce, cheese, Tajin, and cilantro.
